We’ve poured our expertise into these pages to help you make the most out of your cast-iron cookware.
Staub cast iron isn’t just gourmet kitchenware. It inspires people to cook, and to cook better, to try new recipes, and to share meals with loved ones. Staub brings people together in the kitchen, online, around the table for a delicious meal, and, now, in these pages.
When we set out to compile our first-ever cookbook, we knew we wanted it to be a community affair. Our cookware is beloved by notable chefs from around the world, as well as countless home cooks. The recipes would need to resonate with all of them. So we turned to a cook we’ve long admired for elevating everyday affairs: Amanda Frederickson. As it turned out, she loves Staub as much as we love her cooking.
From there, we checked in with friends: chefs, influencers, and other professionals who believe in our cookware as much as we do. Many responded in minutes. They contributed recipes that are a mix of classics and inventive spins. Then we added a few traditional French dishes, a nod to the company’s roots in France, and some weeknight and weekend morning dishes. The goal was to compile approachable and inviting recipes that pique the palates of all home chefs—from amateur to gourmet.
You’ll notice that there is not a “how-to” section or a glossary of ingredients. We aim to inspire by doing: cook a recipe and you’ll learn techniques or maybe even a new flavor combination, while getting a delicious dinner, breakfast, or dessert on the table. We’ll give you the tools to make the most out of our cookware every time. The braised chicken on page 142 is exceptional as it is, but the second time you give it a go you might want to riff—lemons and capers? Citrus and thyme? Be our guest.
Ever since the day Francis Staub brought his first cocottes to a few local stores in Alsace, France, all of our cookware has been made from enameled cast iron. Sturdy but not unwieldy, the heft of a Staub fry pan alone is enough to instill confidence in any cook, not to mention the guarantee of even heat and a good sear.
Unlike traditional cast-iron cookware, Staub is remarkably easy to care for—it can be washed with soap and doesn’t need to be seasoned. The exteriors have a colorful sheen, in hues and silhouettes crafted to feel classic for eternity because they will actually last that long—it’s one of the things that makes Staub so revered. Which is perhaps why we see our cocottes everywhere, set proudly on your stoves even when you’re not cooking with them. We spot them on restaurant tables, as much a part of the decor as the actual decor, and out in the open in chefs’ carefully considered restaurant kitchens. They command pride of place wherever they go.
We’ve subtitled this compilation Modern Recipes for Classic Cast Iron to reflect the way so many of us cook today. We want quick and flavorful weeknight dinners, but we might invest a little more time and effort on weekends or when we’re entertaining. So you’ll find recipes for make-ahead breakfasts and slow-rise breads, twenty-minute dinners and long-simmered specialties. You can start small or go big right off the bat—we simply invite you to celebrate the pleasures of cooking.

Amanda Frederickson (@amandafrederickson) is a professional cook, food stylist, and recipe developer living in Nashville, TN.
Amanda attended San Francisco Cooking School for culinary school and after a stage at one of San Francisco’s Michelin starred restaurants, she landed in the Williams-Sonoma Test Kitchen. For almost 2 ½ years, Amanda wrote recipes and tested products in the Test Kitchen, all with the sole purpose of creating delicious food for the home cook. In addition, she co-wrote 11 cookbooks under the Test Kitchen tiles sold in-stores and online at Williams-Sonoma, as well as authored the Staub Cookbook (Ten Speed Press) which was released in September 2018. I just got this as a gift for my cookbook loving better half - who has a huge cookbook collection - & she absolutely loves it .... we know this will be a valuable tool to our God Given Diet (author: Michelle Kennedy-Hogan) + Keto / Low Carb eating regime (about 3 mo in to date of this review & loving it) & commitment to using healthy cookware for meal preparation.
After years of trying nearly every 'greatest' & 'new' cookware' invention / marketing scheme - we've FINALLY come to realize grandma truly did know what was best - cast iron (Lodge & other excellent USA brands were her mainstays).
We do love USA made Lodge - the best quality / value cookware - period. We've aquired many of their outstanding offerings & they do truly represent the best cookware value .... ever. For gifts over the years, i often splurged on the beautiful Le Creuset Cookware - & we do have a decent collection - but we never truly embraced it as our everyday go-to choice.
One fine day we had an opportunity to aquire (a largely unknown to us) Staub brand cocotte @ a Restaurant Supply . Beautiful indeed - but not true love at first - it went largely unused for years ....

All of the above .... but the real obstacle was the 'something else.' Which we didn't figure out until another gift .... an outstanding Jaques Pepin / Staub brass lid knob from Ser La Table (unfortunatly discontinued - they should sell the rights to this outstanding design to Staub). Though an admittedly expensive addition to an already expensive dutch oven - but, it revealed why we just weren't loving our Staub as much as we thought we should - we HATED the original Staub lid knob - too small / too sharp of edges - just too uncomfortable - for the awesomely designed & heavy Staub lid - the BEST lid design, ever.
Ok, so my cookware mini cookware rant was a bit OT - or was it?
Truly - this book is beautiful + well done. Sure, we would always love even more recipes in a good book - but as it is - it is almost everything we hoped for.
My only real gripe - as a very visual person - is a photo for EVERY recipe would be my preference.
Though, there is a good representation of photos - & they are EXCELLENT (in fact this made for a bit of a slower than usual up-load to the kindle) .... but overall - it is totally worth it to us.

Il libro, ordinato il 27 novembre, anzichè arrivare entro il 23 dicembre (così come da loro assicurato in fase di acquisto), è stato invece consegnato il 13 gennaio!!!!
La consegna va specificaro che non era gestita da Amazon ma dal venditore (veniva dall'estero).
Amazon, dal lato suo, si è prodigata scrivendo al venditore, e si è resa disponibile a rifondere la spesa, il venditore però pessimo, in quanto il libro è stato spedito il 21 gennaio (così si evinceva dalla targhetta sul pacco). Se i venditori non sono in grado di assolvere ai tempi di consegna dichiarati in fase di vendita, forse è il caso che si organizzino con una formula di delivery differente. Il mio era un regalo pensato per Natale, ho dovuto poi ripiegare su altro con un ulteriore spesa....
Per quanto riguarda il libro, molto bello, ben descritte le ricette, e così anche le foto, sarebbe bello averlo anche in italiano...
